  • 1 cup cake flour sifted
  • 1 cup granulated sugar divided
  • 12 large egg whites at room temperature
  • 1 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Prepare the Batter
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, sift together the cake flour and half of the sugar (1/2 cup).
  3. In a separate bowl, beat the egg whites until foamy, then add the cream of tartar and salt.
  4. Continue beating until soft peaks form, then gradually add the remaining sugar while beating until stiff peaks form.
  5. Gently fold in the flour mixture and vanilla extract until just combined.
Bake the Cake
  1. Pour the batter into an ungreased tube pan.
  2. Bake in the preheated oven for 30-35 minutes, or until the cake is golden and springs back when touched.
  3. Remove from the oven and invert the pan to cool completely.
  4. Once cooled, run a knife around the edges to release the cake.
